Open the downloaded .dmg, drag Polish into Applications, then eject the disk image. Run it from Applications—not from the disk image.

Use the POLISH-XXXX-XXXX code you received, then approve the permissions Polish needs for dictation and meeting capture. If macOS asks whether Polish can access data from other apps, choose Allow—that is Polish's own data.
